Bistro 72 Presents: Cooking with Crooked

We are excited to announce our collaboration with Crooked Ladder Brewing Company of Riverhead for our Cooking with Crooked dinner on Tuesday, May 17th. Chef James of Bistro 72 has created a three-course menu complete with a beer pairing journey. Nate Payne from Crooked Ladder will be on-site alongside Chef James to give detailed descriptions of each featured beer and how we use them in our cuisine.

Bistro 72 Lobster Bisque paired with Crooked Ladder’s Kolsch

Each course of the meal comes with a full pint of the pairing selection, and in some cases the beers are used in the recipes themselves. The meal begins with our signature Lobster Bisque, garnished with butter-poached cold water Maine lobster and paired with Crooked Ladder’s German Kolsch. The Kolsch is a straw-colored ale whose touch of malt and light hop characteristics make it a great starter beer and a flavor that brings out the rich texture of the lobster.

The main course offers guests two entree options whose recipes both include Crooked Ladder’s Ponquogue Porter. The porter, used to braise the lamb shank, gives it a rustic and rich taste as the dark beer is reduced with heat and left behind to keep the lamb juicy. As the alternative, the Mojo-Marinated Chicken is placed upon a bed of polenta enhanced by the dark malt and coffee flavors of the porter.

For dessert, we’re putting a whole new spin on beer. Crooked Ladder’s Oatmeal Cream Stout maintains its delicious characteristics by being kept cold. We add a scoop of vanilla ice cream to a pint of the oatmeal stout and Voila! This delectable dessert will having you screaming for more.
