Local Ingredients Series: Shelly Sells Sea Salt

Each weekend, wet suit and all, Michele Martuscello returns to the south shore of Long Island to harvest a new batch of sea salt. Her company, Shelly Sells Sea Salt, is the newest member of sea salt purveyors on the East End. And her signature product, freshly harvested and local sea salt, will be proudly served as part of our menu at Bistro 72.

“We are excited to work with Shelly and develop new and innovative ways to use sea salt in preparation and presentation of our cuisine at Bistro 72” says Chef Joey Cormier.

The idea to harvest sea salt began one evening during a walk on the beach. Martuscello and her mother wondered if they could harvest salt from the ocean themselves. The ingredient was a staple in their family’s cuisine given their Italian heritage and Michele’s father always promoted the idea of local food to the family.

What began as a novelty hobby turned into a business when friends and family began placing orders. Three years ago, Michele ‘Shelly’ Martuscello began selling the sea salt online. Since then, she has expanded her product line into scented sprays for hair as well as body scrubs. She also offers three flavored salts in addition to the original handmade version: Citrus, Black Truffle, and Hickory-Smoked.

The lavender-scented spray for hair is a popular seller at farmer’s markets, and goes to show there are many other uses for the sea salt beyond seasoning. Martuscello also uses her salt for everything from saline mouth wash to non-abrasive stain remover. She says that sea salt provides therapeutic benefits that start with the collection process and carry all the way into seeing the success of a finished batch.

Harnessing the local resources and patronizing small businesses of LI are integral to our restaurant’s mission, and we are proud to announce that Shelly’s Sea Salt will be present throughout our upcoming Fall menu.

Local Ingredients Series: Rottkamp’s Fox Hollow Asparagus

For more than 100 years, the Rottkamp family has grown vegetables on Long Island. The 250 acre farm in Calverton dates back to the mid-1800’s, when they established their local reputation for rich, succulent sweet corn. Another one of their specialties, the asparagus, has become a favorite among the local vegetables we serve at Bistro 72. The asparagus plant, called a crown, takes years of cultivating to produce premium spears, the part of the plant that we eat.

At Bistro 72, we find the Fox Hollow Asparagus to be the perfect addition to our vegetable-based recipes. In addition to being served as the vegetable du jour, we also feature asparagus in some limited-time small plates. For catered events at the Hotel Indigo ballroom, prosciutto-wrapped asparagus is offered as an introduction to Long Island’s delicious locally-grown vegetables.

Moroccan Sea Bass

More prominently, the Fox Hollow Farm asparagus is featured on our vegan pizza and alongside the vegan ravioli. Is it also the complementary vegetable served with the Moroccan Sea Bass. The Za’atar spices that coat the sea bass highlight the sweet yet earthy flavor of the asparagus. Picked fresh daily, asparagus grows best in soil with a slightly higher saline content. Soil with this type of composition occurs in places with nautical climates, making Long Island asparagus a delicious local delicacy that we’re proud to serve at Bistro 72.

Local Ingredients Series: Rough Rider Straight Bourbon Whiskey

Inspired by the virtues of independence, excellence, and pursuit of adventure, Rough Rider Straight Bourbon Whiskey is handcrafted in small batches by Long Island Spirits in Baiting Hollow. Besides being enjoyed neat and on the rocks as an evening spirit, this elixir is matured in high proof local brandy casks and the result is a perfectly-aged straight bourbon with hints of vanilla, caramel, and spice. This oaky flavor profile enhances savory foods, especially when prepared with other complementary local ingredients.

Superior Short Rib Tacos

The Short Rib Tacos are one of our favorite dishes and they are an incredible way to enjoy the smooth sweetness of Rough Rider Straight Bourbon Whiskey. A rich mixture of Rough Rider and a traditional demi-glace creates a savory sauce that is folded into the ribs. This process, along with slowly applying heat, candies the ribs to excellence. The complexity of the whiskey enhances the potency of the demi-glace, turning the short ribs into a delectable filling for tacos.

The ribs are placed into an unconventional wrapper: a light and crispy fried wonton shell. Topped with potato sticks, local microgreens from Koppert Cress, and our unique Rough Rider Whiskey Worcestershire sauce; the flavor is exquisite. In the Worcestershire, the Rough Rider’s spicy body brings out the slight bitterness of the vinegar and lemon: a perfect complement to the fresh and savory flavors of the ribs and garnish.

Outstanding Onion Rings

Serving as a perfect opening to a meal at Bistro 72, the Rough Rider Straight Bourbon Whiskey appears in this appetizer not once but three times. First, the onions are freshly sliced and dipped in Rough Rider. From there, we toss them in a carefully-perfected batter that also includes the whiskey and essential complementary spices. Once the rings are fried to crispy excellence, we serve them with another uniquely Bistro 72 sauce: a barbecue sauce and aioli hybrid.

The dipping sauce, a fabulous pairing for the crunchy rings, features Rough Rider whipped with mayonnaise into an aioli and brought together with barbeque sauce to connect and enhance the range of flavors in the onion and batter.
