The Short Rib Tacos are one of our favorite dishes and they are an incredible way to enjoy the smooth sweetness of Rough Rider Straight Bourbon Whiskey. A rich mixture of Rough Rider and a traditional demi-glace creates a savory sauce that is folded into the ribs. This process, along with slowly applying heat, candies the ribs to excellence. The complexity of the whiskey enhances the potency of the demi-glace, turning the short ribs into a delectable filling for tacos.
The ribs are placed into an unconventional wrapper: a light and crispy fried wonton shell. Topped with potato sticks, local microgreens from Koppert Cress, and our unique Rough Rider Whiskey Worcestershire sauce; the flavor is exquisite. In the Worcestershire, the Rough Rider’s spicy body brings out the slight bitterness of the vinegar and lemon: a perfect complement to the fresh and savory flavors of the ribs and garnish.

First, the onions are freshly sliced and dipped in Rough Rider. From there, we toss them in a carefully-perfected batter that also includes the whiskey and essential complementary spices. Once the rings are fried to crispy excellence, we serve them with another uniquely Bistro 72 sauce: a barbecue sauce and aioli hybrid.
The dipping sauce, a fabulous pairing for the crunchy rings, features Rough Rider whipped with mayonnaise into an aioli and brought together with barbeque sauce to connect and enhance the range of flavors in the onion and batter.
