Spring onto the East End

Introducing the Spring menu at Bistro 72: an inspired collection of Long Island-sourced fresh ingredients paired with the sensory experience of the season on the East End.

The creations found on our Spring menu are made with local ingredients from places like Braun Seafood Company and the East End Mushroom Company (both of Cutchogue), we introduce micro greens from Koppert Cress of Cutchogue and burrata cheese from Catapano Dairy of Mattituck. Nodding to our rich heritage of spirits on the East End, we use several breweries’ and vineyards’ best offerings as bases or additions in our savory sauces. Sparkling Pointe (Southold) white wine, for example, goes into the tangy vinaigrette that brings our Atlantic Sea Scallops to life.

The inspiration behind our well-balanced spring menu is all in the art of presentation and the fusion of unique flavors. With South American and French cuisine in mind, Chef James created a diverse selection of dishes that stand alone delightfully and pair well with others for a multi-course meal. Seasonal tastes and the colors of Spring on Long Island lend to dishes that combine hot & cold elements, like our Twin Lobster Roll.

Entertain your palate with our Tomato & Burrata Salad, featuring robust, yet delicate, fresh flavors and the bright spring colors of heirloom tomatoes.  For your entree course, our Sofrito Marinated Chicken begins with an organic chicken breast marinated with sofrito (a mixture of garlic, lime and cilantro of Taino’s Sofrito & Mojo, Calverton). It is set atop a goat cheese polenta and drizzled with mojo sauce for a southwestern flair.

Our $29 Prix Fixe menu includes some of our chef’s best dishes and begins with a savory starter to activate your palette, like our Butternut Squash soup with roasted pumpkin seeds or our Bistro 72 salad with fresh seasonal fruit. Pan Seared Salmon and Shrimp Scampi are just two of the available entree options, and we finish the meal with a sweet selection like Bananas Brûlée or Flourless Chocolate Gateau.
