Local Ingredients Series: Shelly Sells Sea Salt

Each weekend, wet suit and all, Michele Martuscello returns to the south shore of Long Island to harvest a new batch of sea salt. Her company, Shelly Sells Sea Salt, is the newest member of sea salt purveyors on the East End. And her signature product, freshly harvested and local sea salt, will be proudly served as part of our menu at Bistro 72.

“We are excited to work with Shelly and develop new and innovative ways to use sea salt in preparation and presentation of our cuisine at Bistro 72” says Chef Joey Cormier.

The idea to harvest sea salt began one evening during a walk on the beach. Martuscello and her mother wondered if they could harvest salt from the ocean themselves. The ingredient was a staple in their family’s cuisine given their Italian heritage and Michele’s father always promoted the idea of local food to the family.

What began as a novelty hobby turned into a business when friends and family began placing orders. Three years ago, Michele ‘Shelly’ Martuscello began selling the sea salt online. Since then, she has expanded her product line into scented sprays for hair as well as body scrubs. She also offers three flavored salts in addition to the original handmade version: Citrus, Black Truffle, and Hickory-Smoked.

The lavender-scented spray for hair is a popular seller at farmer’s markets, and goes to show there are many other uses for the sea salt beyond seasoning. Martuscello also uses her salt for everything from saline mouth wash to non-abrasive stain remover. She says that sea salt provides therapeutic benefits that start with the collection process and carry all the way into seeing the success of a finished batch.

Harnessing the local resources and patronizing small businesses of LI are integral to our restaurant’s mission, and we are proud to announce that Shelly’s Sea Salt will be present throughout our upcoming Fall menu.

Summer Fun on the Patio

The sun is out and things are heating up at Bistro 72! Join us on the patio for three Thursdays this Summer to celebrate our Summer Patio Series. Each includes an outdoor live music performance and signature libations.

Come one, come all. Everyone is welcome and tickets/reservations are not required. Accompanying small plates menus will be available at each event.

Gin & Jazz: Thursday June 23

Martin Miller’s Gin has been changing drinkers’ perspectives at every tasting worldwide and we’re bringing it to you right here on the East End. Using traditional techniques in two separate distillations, the highest quality botanicals are combined to showcase the heart of the spirit with earthy and citrus notes.

We’ll be serving a variety of cocktails so you, too, can enjoy this smooth gin with a light floral nose and hints of cucumber.

Johnny Sax and his trio will be performing the smooth sounds of Jazz, Fusion and Standards while we swing the night away under the stars with gin in hand.

Rose Garden Party: Thursday July 21

Palm on the Patio: Thursday August 18

Belgian craft brewer Palm delivers its namesake beer with honey-like mellowness, a fruity aroma, and mild caramel flavor. Made for socializing, the flavor nuances of Palm beer make it an excellent pairing for the rich flavors and textures found in local Long Island mussels.

Wheat beer has been paired with seafood in Belgium for centuries and we’re happy to bring the tradition to the East End. We’ll be serving up expertly-crafted dishes made with Long Island mussels alongside the Palm beer and the sounds of Robert Bruey.

Summer on Long Island: Our New White Wine Flight

We’ve revamped our white wine flight to feature some of the best that the North Fork has to offer. The three wine selections for the flight are chosen to highlight the different variations in color that white wines can take on. The wines are decanted to release distinct flavors and aromas, perfect for two during a summer afternoon on our patio.

Anthony Nappa’s Luminous

Anthony Nappa’s Luminous Riesling (Peconic) delivers a sweet beginning for this flight of three. This bright wine gets it’s sweetness during the fermentation process and features aromas of honeysuckle and citrus blossoms. Light on the palate, flavors of golden apple and guava fruit lead to a crisp finish. The 2013 vintage of this wine earned 91 points from Wine Enthusiast.

Osprey’s Dominion Regina Maris Chardonnay

Osprey’s Dominion Regina Maris Chardonnay (Peconic) is the perfect balance to the sweet beginning of the flight. Not too sweet, this wine exhibits tropical flavor of apple, melon and a hint of pineapple. Delicious and crisp, the fruitiness of the wine is rounded out by hints of butter and toasty oak. This chardonnay grape is a 2011 North Fork vintage.

Bridge Lane White Merlot

The most unique of the three wines featured in the flight, Bridge Lane’s White Merlot (Mattituck) is actually made from traditional red Merlot grapes. The fruit is harvested early in the season and pressed delicately in clusters. The resulting juice has no contact with the red skins, resulting in the light color and bright grapefruit aroma. Citrus flavors of lemongrass and accompanying Fiji apple notes meet the palate followed by a clean finish.
